尊敬的各位评委,现场的各位观众朋友,大家好!我今天非常高兴,我非常接近站在这里参加这次演讲比赛。那我就直截了当地开始今天的演讲。

随着人们生活水平的提高,我们越来越重视饮食。我们不再满足于吃饱,而是吃得好。因此,人们对食物的色、香、味的追求得到了提高,用来满足生理需要的食物也更名为更加丰富多彩的食物。

长期以来,广大人民群众利用各种丰富的物产,创造出多种多样的具有地方风味特色的菜肴和与之相适应的各种烹调方法,从而形成了中国独有的饮食文化。地方菜中比较著名的有京菜、川菜、粤菜、沪菜等,都有自己的特色。如京菜擅长炸、溜、爆、烤,菜肴取其脆、嫩,口味重于香鲜;川菜以干烧、干炒、、宫爆最为突出,菜肴入味,口味重于酸、辣、麻、香等。

这些地方采的不同风味特征构成了中国烹饪技术的丰富场景。

几千年来,许多人将食品的评价标准界定位颜色、香味、口感、民族性和地域性等。其中,色、香、味往往是最重要的。但是,我却认为美食究竟美还是不美,不能只看色、香、味儿,而是更应该注重其安全性和营养价值,同时要兼顾其营养成分的全面性与均衡性。

有些人经常在路边吃烧烤,认为这是一种美味的食物。但我不同意这种所谓的美味,因为我担心不卫生。即是烧烤的生产过程是按照严格的标准进行的,但烧烤中仍含有大量的亚硝酸盐、樱桃油等。

亚硝酸盐容易与人体蛋白质中的胺结合,形成强致癌物亚硝胺。亚硝胺最易引起胃癌、食管癌和肝癌,也可引起鼻咽癌和膀胱癌,严重危害人类健康。

有些人把膨化食品当成美味,甚至为了方便把零食当成晚餐,忽视了食堂的美味。而我却很少吃这类零食。因为它含有更多的有害物质,如铅。

铅会引起注意力不集中、记忆力差、多动症、冲动和脾气暴躁。

我对美食的**也是极为浅显,但是如果一碗味道恬淡的清粥和一盘麻辣辛香的烧烤摆在我的面前让我做出心中美食的选择的话,我一定会选着清粥。大家也许不解我的选择。原因有三。

一是:一碗粥需要长时间的温热慢煮,在此期间,耐心和细心会倾注到烹调中。二是:

相对于麻辣火热的口感,我更喜欢恬淡可口感觉。三是:相对于危害身体健康的烧烤,我喜欢有利于我们肠道消化,促进身体健康的清粥。

现在,你还认为普通的粥不是美味吗?这样一碗粥营养健康。我认为这也是一种美食。

总之,我觉得对美食的追求应该多注意安全性和营养价值,注意食用方法的科学合理,决不能甜了嘴,却伤了身体。

岭南因为气候较好,种植出来的农副产品比较好,比较多,一向都有鱼米之乡之称。岭南的美食佳肴,味道鲜美,香浓入味。此刻,就来品尝我们岭南的各种风味美食吧。

岭南的特产食品分为小食,家常菜,水果等。第一,我要来介绍的就是我们的岭南佳果荔枝。荔枝能称得上是岭南果霸了,荔枝是我们岭南培养起来,因为就只有岭南这一带地区才适合种植,荔枝是热带果实,受不起寒冷的影响,所以就会在岭南范围内生长得出。据说,以前杨贵妃很喜欢吃荔枝,到了荔枝的季节,皇帝为了博取杨贵妃一笑,派人骑千里马从北方千里迢迢地来岭南摘荔枝回去吃,连续跑了三天三夜,死了几匹千里马才将荔枝送到,之后,当地人将杨贵妃曾吃过的那棵树叫妃子笑来命名。荔枝味道鲜美,剥开深红色的皮,轻轻地咬上一口,鲜甜的果汁渗入口中,稍微有点儿酸,加上甜甜的味道,只要吃过的人,都会赞不绝口,回味无穷,真是日啖荔枝三百颗,不辞长作岭南人。唐代诗人白居易尝过荔枝后、也不禁赞叹道:嚼疑天上味,嗅异世间香,润胜连生水,鲜逾桔汤霜。什么东西都有它的优点和缺点,而它的缺点就是比较燥热,吃得太多会上火的哦!

除了香浓甜醇的荔枝,当然还有其它美食,我们岭南人有喝早茶的习惯。接不来,就说说岭南美食之四——糯米鸡。说起糯米鸡也有好多种类,湖南的,赣州的,但是,我们岭南的糯米鸡就与众不一样,受人喜爱。

顾名思义,糯米鸡务必用糯米做的,选一些大片的荷叶,将糯米浸泡两个小时,再取出滤干,放入蒸锅中蒸熟,将鸡肉切成小块,调好味道,然后再把蒸熟的糯米饭,鸡,蛋的材料一齐用荷叶裹上,再蒸一会就能能吃啦!介绍完做法,就来品尝一下吧。糯米鸡胀鼓鼓的,厚墩墩的,就像两只缩在一齐的小狗熊,拆开荷叶,一阵荷叶的香味吸引你忍不住去咬一口,就能到里面的鲜甜,多汁的饭,饭里还伴有鸡肉,蛋等等的佐料。真是糯米鸡中吃一口,美味尽在此刻中。

要说起这道美食,我们先得从它的主料藕说起。虽然我也是一个江南人,但还从未见过如此多的藕,成片成片的分布着。到了收获的季节,就会雇佣人来挖掘,也只有熟络技术的人才能挖出既长又完好无损的藕。当地人们说,只有没被破坏的藕,做出的“香薰肉藕片”才能保持原有的那份滋味。

不仅仅主料藕要完好,厨师的刀工也要一定的水平。待藕洗干净后,先将藕切成一个个稍厚的圆片,再在圆片侧面破开一条缝,将原先准备好的肉末轻轻的塞到缝隙间,然后再用适度的力合拢。一个个弄好之后,再按照自我喜欢的形状排入餐盘,加入一些必备配料,然后放入蒸笼中。先用大火烘干水分,再用小火温热。据说用这种方式能够促进肉的美味渗透到藕片中,堪称美味。不仅仅有了淡淡的清香,还有清新的色泽,有机会真想去尝尝味儿。

刀削面是山西人民日常喜食的面食,因其风味独特,驰名中外。刀削面全凭刀削,因此得名。用刀削出的面叶,中厚边薄。棱锋分明,形似柳叶;入口外滑内筋,软而不粘,越嚼越香,深受喜食面食者欢迎。它同北京的打卤面、山东的伊府面、河南的鱼焙面、四川的担担面,同称为五大面食名品,享有盛誉。

刀削而对和面的技术要求较严,水、面的比例,要求准确,一般是一斤面三两水,打成面穗,再揉成面团,然后用湿布蒙住,饧半小时后再揉,直到揉匀、揉软、揉光。如果揉面功夫不到,削时容易粘刀、断条。刀削面之妙妙在刀功。刀,一般不使用莱刀,要从特制的弧形削刀。操作时左手托住揉好的面团,右手持刀,手腕要灵,出力要平,用力要匀,对着汤锅,嚓、嚓、嚓,一刀赶一刀,削出的面叶儿,一叶连一叶,恰似流星赶月,在空中划出一道弧形白线,面叶落入汤锅,汤滚面翻,又象银鱼戏水,煞是好看,高明的厨师,每分钟能削二百刀左右,每个面叶的长度,恰好都是六寸。吃面前,能够参观厨师削面,无异于欣赏一次艺术表演。

刀削面的调料(俗称"浇头"或"调和"),也是多种多样的,有番茄酱、肉炸酱、羊肉场、金针木耳鸡蛋打卤等,并配上应时鲜菜,如黄瓜丝、韭菜花、绿豆芽、煮黄豆、青蒜末、辣椒面等,再滴上点老陈醋,十分可口,大家有机会一定要尝一下正宗的山西刀削面。
